Start by making the glaze in a medium mixing bowl.
Heat 1 cup of brown sugar, 1/2 cup of honey, 1/4 cup of bourbon, 2 tablespoons of Dijon mustard, and 1/2 cup of apple cider vinegar in a small saucepan over medium heat for about 2 to 3 minutes until blended and slightly thickened.
Taste the glaze and adjust if necessary, adding more bourbon, lemon juice, Dijon mustard, or smoked paprika as needed.
Prepare the slow cooker by placing fresh rosemary and thyme sprigs at the bottom.
Pat the 7 to 9 lb spiral ham with paper towels and place it cut side down into the slow cooker, trimming if necessary for a snug fit.
Pour about half of the glaze over the ham, ensuring it seeps between the slices, and reserve the remaining glaze for basting later.
Cover the slow cooker with its lid and cook on low for about 4 to 5 hours, or until the ham is heated through and tender, reaching an internal temperature of 140°F.
Baste the ham with the reserved glaze every hour, ensuring it gets in between the slices.
Optionally, preheat the oven's broiler to high and broil the ham for 3 to 5 minutes for caramelization, keeping a close eye to avoid burning.
Transfer the ham to a serving platter, pour over any remaining glaze, garnish with fresh rosemary and thyme, and slice to serve warm.
