1

Wash the green bananas (green figs) and cut off the top and bottom ends.

2

Place the green bananas in a pot, cover with water, and boil until cooked thoroughly, about 25 minutes.

3

Check the doneness of the green bananas with a fork; they should pierce easily.

4

Remove the green bananas from the heat and let them cool before peeling.

5

Peel the skin off the cooked green bananas and cut them into small pieces.

6

Use a potato masher to mash the green bananas until smooth.

7

Season the mashed green bananas with dried basil leaves, garlic, ginger, and a small bit of black pepper (no salt).

8

Grease a baking dish with butter and layer half of the mashed green bananas in it.

9

Add half of the shredded saltfish on top of the mashed green bananas.

10

Layer sliced tomatoes, sliced bell pepper, and sliced onion over the saltfish.

11

Add the remaining shredded saltfish on top of the vegetables.

12

Add the remaining mashed green bananas on top of the second layer of saltfish and vegetables.

13

Pour 1/2 cup of evaporated milk over the top of the layered dish.

14

Preheat the oven to 350°F and bake the dish until heated through and the top is golden, about 30-35 minutes.
