Greek yogurt offers a thicker texture with fewer calories.

Parsley is more widely available and less expensive.

Prepare strained yogurt or regular yogurt, adding less water if using regular yogurt.

Soak wheat overnight for better cooking.

Cook the soaked wheat in boiling water until fully cooked, about 5 to 10 minutes.

In a bowl, mix 1 cup of strained yogurt with 1 egg and 1 tablespoon of flour using a whisk.

Add 4 to 5 cups of boiling water to the pot with cooked wheat.

Let the mixture boil, then simmer for 5 to 7 minutes.

Chop 4 to 5 scallions and add them to the pot, sautéing for a couple of minutes until they are still green.

Add 1 teaspoon of dried mint and salt to taste, stirring well.

Serve hot, garnished with fresh cilantro.
