Soak hulled hemp seeds in water for a couple of hours or overnight.
Drain the water from the soaked hemp seeds.
Add the drained hemp seeds to a high-speed blender or food processor.
Add tahini sauce (about 2-3 tablespoons, depending on thickness) to the blender.
Squeeze in the juice of 2 fresh lemons into the mixture.
Add 4 garlic cloves to the blender.
Add fresh mint leaves (or dried mint if fresh is unavailable).
Add a little bit of salt and black pepper to taste.
Add sumac spice (optional).
Blend the mixture until smooth, adding water if necessary to achieve desired consistency.
Add chopped parsley to the mixture and blend briefly to combine, but not too much to retain some white color.
Transfer the blended mixture to a serving bowl.
Grate 2-3 cucumbers and add them to the sauce, mixing well.
Adjust the consistency by adding more cucumber if needed.
