Preheat the grill to medium-high heat.
Remove the heart from the marinade and season with rosemary and thyme.
Grill the heart for 5-7 minutes per side until it reaches medium-rare doneness.
Let the heart rest for 10 minutes before slicing.
In a skillet, heat olive oil over medium heat and sauté onions until translucent.
Add carrots and celery, cooking until softened, about 5-7 minutes.
Deglaze the skillet with red wine, scraping up any browned bits from the bottom.
Add beef broth and bay leaves, simmering for 10 minutes to blend flavors.
Serve the sliced heart on a bed of sautéed vegetables, garnished with parsley.
