Cut the beef into cubes if not pre-cut, using stew beef from chuck roast.
In a bowl, combine 1 tablespoon Montreal seasoning, 1 tablespoon soy sauce, and 1 teaspoon sugar with the beef.
Mix the marinade well to ensure the beef is evenly coated.
Cover the bowl with plastic wrap and let it marinate for about 1 hour at room temperature.
Prepare the vegetables by cutting the bell pepper and onion into large chunks suitable for skewering.
Thread the marinated beef, bell pepper, and onion onto skewers, alternating between them.
Preheat the grill and place the skewers on one side to cook while keeping the fire on the other side for a smoky effect.
Close the grill lid for the first 8 minutes to smoke the beef.
After 8 minutes, rotate the skewers for even cooking and continue to grill for another 8 minutes, turning every 2 minutes until cooked through.
