Preheat the oven to 375°F (190°C).
Clean and dry the duck, removing excess fat.
Season the duck inside and out with salt and black pepper.
Stuff the cavity of the duck with quartered apples, onion, and garlic.
Tie the legs together with kitchen twine and tuck the wings under the body.
Rub the skin with softened butter and sprinkle with thyme and rosemary.
Place the duck on a rack in a roasting pan, breast side up.
Roast the duck for about 1 hour, basting occasionally with pan juices.
Add chopped carrots and potatoes around the duck after 30 minutes of roasting.
Mix honey, white wine, and chicken broth, then pour over the duck and vegetables.
Continue roasting for another 30-45 minutes until the duck is golden brown and the internal temperature reaches 165°F (74°C).
Let the duck rest for 15 minutes before carving.
Serve the duck with roasted apples and vegetables on the side.
