Let 4 tablespoons of unsalted butter and 1 egg sit at room temperature for 30 minutes to 1 hour.
In a medium-sized mixing bowl, sift together 1 1/4 cups of all-purpose flour, 1 teaspoon of baking powder, and 1/4 teaspoon of table salt, then whisk to mix.
In the bowl of a stand mixer, add the softened butter and 1/3 cup of white granulated sugar, and mix on medium speed until combined and fluffy, about 1 minute.
Scrape down the bowl as needed, then add the room temperature egg, 1/4 cup of ube halaya, 1 1/2 teaspoons of ube extract, and 2 drops of purple food coloring. Mix on low medium speed until just combined.
Scrape down the bowl and paddle attachment as needed, then turn the speed to low and carefully add in the dry ingredients, mixing until just combined.
Detach the bowl from the stand mixer, scrape down the bowl and paddle attachment again, and fold in any unmixed dry ingredients until uniform.
Cover the bowl with plastic wrap and let the dough rest in the fridge overnight to firm up.
Preheat the oven to 350°F (175°C) and place the oven rack in the middle position.
Line a 13 by 18 inch sheet pan with parchment paper without greasing it.
Measure 2 tablespoons of granulated sugar into one small bowl and 1/2 cup of powdered sugar into another small bowl.
Using a round tablespoon measure, scoop a heaping tablespoon (about 1 1/2 tablespoons) of chilled dough and form it into a sphere approximately 1 inch in diameter.
Roll the formed dough sphere in the bowl of granulated sugar for a light layer, then roll it in the bowl of powdered sugar until completely covered.
Place the ball on the prepared baking sheet, spacing them about 2 inches apart, and repeat with the remaining dough.
Bake in the preheated oven for 12 to 15 minutes until the sides have set but the centers are still soft.
Let the cookies cool on the sheet pan for 5 minutes before transferring them to a wire rack to cool completely.
