Both alternatives add freshness and crunch.

1

Make dabeli masala by slow roasting spices like coriander, fennel, sesame, cumin, bay leaf, and cardamom until golden and fragrant.

2

Turn off the flame and add powdered spices and dry coconut to the roasted spices, stirring continuously.

3

Let the spice mixture cool down completely.

4

Prepare a garlic spicy tangy chutney by blending garlic cloves, roasted peanuts, lemon juice, Kashmiri red chili powder, salt, and water until smooth or chunky as per preference.

5

Heat a pan with about 2 tablespoons of oil and add about 3 tablespoons of dabeli masala and 1 tablespoon of sweet tamarind chutney, roasting until fragrant.

6

Add 5 boiled and mashed potatoes to the pan, seasoning carefully with salt.

7

Add about 1 cup of water to adjust the consistency of the potato mixture, mixing well and letting it cool down.

8

Decorate the potato mixture with dry coconut, tutti frutti, and chopped coriander leaves, and pomegranate seeds for added flavor and texture.

9

Cut the pav bread horizontally without slicing all the way through, creating a pocket.

10

Squeeze the pav from inside to create space for stuffing.

11

Spread garlic chutney at the bottom of the pav, followed by sweet tamarind chutney on top.

12

Stuff the pav with a spoonful of the potato mixture, layering with chopped onions and coriander.

13

Repeat the stuffing process as desired, adding more peanuts and pomegranate seeds on the outside if preferred.

14

Toast the stuffed pav in a hot pan with about a teaspoon of butter, pressing down gently.

15

Garnish the toasted pav with sev, extra peanuts, and onions before serving hot.
