The Halifax Donair originated in Halifax, Nova Scotia, in the 1970s, inspired by Middle Eastern shawarma. It quickly became a beloved late-night snack and fast food staple in the region. The dish is characterized by its unique sweet sauce made from evaporated milk, sugar, and garlic, which sets it apart from other similar dishes. Today, donairs are enjoyed across Canada, often featuring variations in meat and toppings, reflecting local tastes and preferences.

Start by drinking a beer and discussing the tradition of donairs in the Maritimes.
In a mixing bowl, add 2 lbs of lean ground beef.
Sprinkle mixed spices (garlic powder, oregano, black pepper, chicken bouillon, cayenne pepper, and breadcrumbs) over the meat.
Mix the meat and spices thoroughly by hand until well combined.
Prepare a cookie sheet by spraying it with nonstick spray.
Transfer the mixed meat onto aluminum foil and spread it out as thin as possible using a rolling pin.
Trim the edges of the meat with a pizza cutter if necessary.
Preheat the oven to 350°F.
Place the flattened meat on a pizza pan lined with foil and put it in the oven.
While the meat cooks, cut up onions and tomatoes for the donair.
Prepare the pita bread by lightly dipping it in water and heating it in a frying pan with butter for a couple of minutes on each side until lightly toasted.
Remove the cooked donair meat from the oven and cut it into strips using a pizza cutter.
Layer the pita bread with donair sauce, meat, onions, and tomatoes.
Optionally add mozzarella cheese and more donair sauce on top.
Wrap the pita around the fillings, starting from the top and rolling it like an ice cream cone.
