Egusi Soup
Cultural Context
Egusi soup originates from West Africa, particularly Nigeria, where it is a staple in many households. Traditionally made with ground melon seeds, it symbolizes communal eating and family gatherings. Today, it has gained popularity beyond Nigeria, with various adaptations worldwide, showcasing the rich flavors of African cuisine.

Blend melon seeds until smooth.
Blend red bell pepper, scotch bonnet, and chili pepper roughly.
Mix blended melon seeds with beef broth to form a paste.
Heat palm oil in a pot.
Add the melon seed paste to the palm oil and stir.
Fry the mixture on medium to low heat, stirring every 2-3 minutes until it resembles scrambled eggs and oil floats on top.
Add crayfish powder and native soup spice to the mixture and continue frying.
Add boiled smoked fish, beef, bush meat, and meat stock to the pot.
Stir well and allow to cook for 20 minutes on medium to low heat.
Add frozen bitter leaf and fluted pumpkin to the soup and allow to melt into the soup.
