Prepare 2.5 kg of beef shank, both with and without bone for flavor.

Chop 1/4 onion, 5 garlic cloves, 1 small potato, and 1 green chili.

Soak 150 grams of guajillo chili in hot water to soften, then turn off the heat and let them sit.

Once the chiles are softened, blend them with the garlic, black peppercorns, cloves, oregano, and enough water to blend smoothly.

Add 3 tomatoes and the chopped onion to the blender and blend until smooth.

Strain the blended mixture through a colander to remove seeds.

In a pressure cooker, place the beef shank and pour the strained chili mixture over it.

Add the whole potato and bay leaves, and season with salt to taste.

Cover the pressure cooker and cook on low heat for 10 minutes without the lid, then seal it and cook for 45-50 minutes.

After cooking, release the pressure and uncover the pot to check the meat, which should be tender and easily shredded.

Shred the meat and separate it from the bones, reserving the broth.
