Daal Tadka

1/2 cup masoor dal/red lentil
1/2 cup tur dal
5 tomatoes
4 green chillies
7-8 garlic cloves
1 tsp red chilli powder
1/2 tsp turmeric
2 inches ginger
2 tsp oil
cream
2 inches cinnamon
1 tsp coriander seeds
3 green cardamom
1 staranise
salt to taste

1/2 cup oil
1 tsp mustard seeds
1 tsp cumin
15 dried red chillies
1/4 tsp hing(asafotida)

Rinse the masoor dal and tur dal thoroughly and soak them in water for about 30 minutes.

In a pot, add the soaked dal, chopped tomatoes, green chillies, garlic cloves, ginger, turmeric, red chilli powder, and salt. Add enough water to cover the ingredients and bring to a boil.

Once boiling, reduce the heat and let it simmer until the dal is cooked and soft.

In a separate pan, heat ghee and oil together. Add mustard seeds and cumin seeds, allowing them to splutter.

Add the curry leaves, dried red chillies, cinnamon, coriander seeds, green cardamom, star anise, and hing. Sauté for a minute until fragrant.

Pour this tempering over the cooked dal mixture and stir well to combine.

Garnish with fresh coriander leaves and serve hot with cream.
