Mix 2 tablespoons of beef gelatin with 1/2 cup of water and set aside to bloom.

In a blender, combine 4 eggs, 1 cup of almond flour, 1/4 teaspoon of salt, and 1 tablespoon of monk fruit.

Add 2 tablespoons of coconut oil to the blender and blend until mixed.

Add the bloomed gelatin, another 1/2 cup of water, and 1 teaspoon of vanilla to the blender and blend again.

Heat a pan on medium to medium-low heat and add a little coconut oil to coat the bottom.

Pour a little less than 1/4 cup of the batter into the pan and swirl it around.

Cook for about 4 minutes on one side until fully cooked, then flip and cook for about 1 minute on the other side.

For the filling, mix 1 package of cream cheese with 1 cup of heavy whipping cream and 2 tablespoons of Alus until fluffy.

For the chocolate sauce, melt no sugar added chocolate chips with a little coconut oil in the microwave, stirring every 30 seconds.
