1 lb. flank beef steak
1 cup cornstarch
1/4 cup water
2 eggs
2 to 3 cups cooking oil
2 tablespoons chopped ginger
2 tablespoons chopped garlic
3 tablespoons cooking oil
1 sliced green pepper
1 sliced red pepper
1 sliced carrot
1 cup water
3 stalk chopped green onion
1 teaspoon sesame oil
3 teaspoons light soy sauce
3 tablespoons dark soy sauce
1/4 cup brown sugar
2 tablespoons vinegar
1 tablespoon cornstarch in 1/4 cup water

Slice flank steak into bite size pieces.

To make batter, combine 1 cup cornstarch, 1/4 cup water and 2 eggs. Mix well.

Heat cooking oil. Dip beef slices in batter and deep fry for 1 1/2 minutes. Cook beef in batches so they don't stick together. Put beef on paper napkins to drain the oil after deep frying.

Preheat a wok or frying pan at medium heat. Add cooking oil and then the chopped ginger and chopped garlic. Stir fry briefly.

Turn heat to high. Add green pepper, red peppers and carrots. Stir fry briefly 2 to 3 minutes, or to desired texture.

Add 1 cup water. Add sesame oil, light soy sauce, dark soy sauce, brown sugar and vinegar. Once the sauce is boiling, add cornstarch water mixture to thicken sauce.

Add the beef into sauce and mix to make sure beef is coated in the sauce. Serve on a nice plate.
