Apple Cinnamon Bircher

Originating from Switzerland, Bircher Müesli was created by physician Maximilian Bircher-Brenner in the early 1900s as a healthy breakfast option. Traditionally served cold, it emphasizes fresh ingredients and is often enjoyed as a nutritious start to the day. Today, variations abound globally, with many adding different fruits, nuts, or sweeteners to suit personal tastes.
Peel and grate one green apple into a bowl.
Chop up two tablespoons of pecans and two tablespoons of almonds roughly.
Add two tablespoons of chia seeds into the bowl.
Add two tablespoons of pepita seeds into the bowl.
Add two tablespoons of shredded coconut into the bowl.
Add half a teaspoon of cinnamon into the bowl.
Pour in half a cup of coconut yogurt.
Pour in half a cup of almond milk.
Add a little bit of vanilla extract and honey for sweetness.
Mix all the ingredients together thoroughly.
Cover the bowl and place it in the fridge overnight.
After overnight soaking, check the mixture; it should have expanded nicely.
Serve the bircher with extra coconut yogurt and fresh berries.
