Cube the pork and place it in a pan over medium heat.

Add 1 cup of water and cover the pan, letting the pork cook for around 5 minutes until the water has reduced.

Once the water has dried off, transfer the pork to a bowl.

Add more oil to the pan and sauté onions, garlic, and ginger for about a minute until golden brown.

Add 3 diced tomatoes to the pan and season with paprika, garlic powder, onion powder, cumin, ground ginger, black pepper, and 1 seasoning cube.

Stir in the seasoning and add the cooked pork back into the pan with some water, covering it to let the pork cook with the tomatoes for 2-4 minutes.

Add 1 teaspoon of light soy sauce and reduce the flame to low, letting the pork simmer for 2-4 minutes.

Stir in green capsicum and cook for around 1 minute, keeping it crunchy.
