1

Place a 10-inch cast iron skillet in the oven on a middle rack and heat the oven to 450°F (232°C).

2

Mix together 2 teaspoons of Italian seasoning, 1/2 teaspoon of dried sage, 1/4 teaspoon of garlic powder, 1/4 teaspoon of kosher salt, and 1/8 teaspoon of freshly ground black pepper in a small bowl.

3

Sprinkle the seasoning mix over both sides of the turkey tenderloin and rub the spices in with your fingers.

4

Using oven mitts, remove the skillet from the oven and add 1 tablespoon of olive oil to the pan.

5

Swirl the pan to coat the entire bottom with oil.

6

Place the tenderloin in the skillet and return the skillet to the oven.

7

Bake for 10 minutes.

8

After 10 minutes, remove the skillet from the oven and flip the turkey over using tongs.

9

Reduce the oven temperature to 400°F (204°C) and continue roasting for another 15 minutes.

10

Remove the skillet from the oven and check the internal temperature of the turkey, ensuring it registers 165°F (74°C) in the thickest part of the meat.

11

Add 2 tablespoons of butter to the top of the turkey and cover the skillet with a large plate, pan lid, or foil.

12

Let the turkey rest for 15 minutes before serving to allow the juices to reabsorb into the meat.

13

Remove the cover, slice the turkey, and spoon the butter sauce over the slices before serving.
