Crock Pot Turkey Tenderloin

1½ pounds turkey tenderloin
1 cup chicken broth or stock
2 tablespoons olive oil
2 tablespoons apple cider vinegar
2 tablespoons honey
1 tablespoon dijon mustard
3 garlic cloves crushed
½ teaspoon dried thyme
½ teaspoon dried rosemary
1 teaspoon sea salt
¼ teaspoon pepper

Whisk olive oil, vinegar, honey, dijon, garlic, herbs, salt, and pepper in a bowl.

Add turkey tenderloins and marinade to a large bag, seal, and toss to coat. Refrigerate 1 to 6 hours.

Place turkey and marinade in the slow cooker. Pour broth over the top and cover.

Cook on low 6 to 8 hours, checking temperature after 4 hours.

Remove when internal temp reaches 163 degrees F. Rest 10 minutes before slicing.
