Make the peanut sauce by combining 1.5 cups of peanut butter, 1 cup of coconut milk, 3 tablespoons of brown sugar, 3 cloves of garlic, 2 teaspoons of sambal, 1 teaspoon of salt, 1 stalk of lemongrass, 4 shallots, 2 inches of ginger, and 2 tablespoons of lime juice in a food processor.

Slice the shallots and garlic, then add them to the food processor.

Heat a tablespoon of the thicker part of the coconut milk in a large heavy bottom saucepan over medium-high heat.
