This comforting dish showcases the rich flavors of slow-cooked beef and fresh vegetables, embodying the warmth of Slovenian hospitality. Today, variations can be found across Central Europe, with each region adding its own twist to this beloved recipe.

Olive oil offers healthier fats and margarine is often cheaper.
Prepare the ingredients: clean the vegetables including onion, celery root, parsnip, celery, and carrots.
In a large pot, add 10 cups of water and the beef bones, bringing it to a boil.
Once boiling, strain the soup and remove any foam from the top.
Add 15 whole peppercorns, 2 cloves of garlic, and 1 bay leaf to the pot.
Cover and simmer on low heat for about 2 hours.
In a frying pan, heat a little olive oil and brown the onion until caramelized.
Add the caramelized onion, celery root, celery, parsnip, and carrots to the pot.
Season with 1 teaspoon of salt and optional dried parsley.
Cover and simmer for 30 minutes after it boils again.
In the meantime, bring water to a boil in another pot, add salt, and cook 1 cup of fine egg noodles according to package directions (about 5 minutes).
Strain the noodles and set them aside.
Strain the soup into another pot and bring the clear broth back to a boil.
Ladle the soup into serving bowls, adding noodles, vegetables, and bone marrow as desired. Season with salt and pepper to taste.
