Prepare the dough by mixing all-purpose flour, instant yeast, and salt in a bowl.
Melt the butter and combine it with milk and sugar until dissolved.
Add the wet ingredients to the dry ingredients and mix until a dough forms.
Knead the dough on a floured surface until smooth, about 5 minutes.
Place the dough in a greased bowl, cover, and let rise until doubled in size.
Prepare the filling by grinding roasted walnuts, cinnamon, honey, light brown sugar, melted butter, vanilla extract, and egg yolk together until well combined.
Roll out the risen dough into a rectangle on a floured surface.
Spread the walnut filling evenly over the dough.
Roll the dough tightly into a log, pinching the seams to seal.
Place the log in a greased baking dish, cover, and let rise for another 30 minutes.
Preheat the oven to 350°F (175°C).
Brush the loaf with a mixture of egg, water, and salt before baking.
Bake the potica for 30-40 minutes, until golden brown.
