1/4 cup urad dal
1/4 cup moong dal
1/4 cup chana dal
1 & 1/2 cup water (to soak)
1/4 cup sour curd
1 tbsp ginger chilli paste (2 small chilli + 1 inch ginger)
1 tsp salt (as per taste)
1 tbsp oil
1 tsp Eno / fruit salt
1 tsp water (to activate Eno)
chilli powder (sprinkle on plate)
black pepper powder (sprinkle on plate)

Soak the rice, urad dal, moong dal, and chana dal in 1 & 1/2 cups of water for a few hours or overnight.

After soaking, drain the water and blend the soaked ingredients into a smooth batter.

Add sour curd to the batter. If using normal curd, mix in 2 tbsp of lime juice.

Incorporate ginger chilli paste and salt into the batter and mix well.

Add Eno / fruit salt to the batter and mix gently.

Pour the batter into greased Dhokla plates.

Sprinkle chilli powder and black pepper powder on top.

Steam the Dhokla for about 15-20 minutes until cooked through.
