1/4 teaspoon baking soda

Take 1 cup of rice and rinse it well until the water runs clear, changing the water 2-3 times.

Add 1/2 cup of gram dal and 1/4 cup of urad dal to the rinsed rice and rinse them together.

Soak the rice and dal in warm water for 3-4 hours, covering them.

After soaking, drain the water and transfer the mixture to a large mixer jar.

Add 1/2 cup of poha to the jar with the soaked rice and dal.

Add 1/2 cup of sour yogurt to the mixture, using the same measuring cup as before.

Blend the mixture to a coarse consistency, adding water if necessary, about 1/2 cup.

Transfer the batter to a bowl and let it rest for 1-2 minutes to incorporate air.

Add 1 teaspoon ginger chili paste, 1/2 teaspoon salt, and 1 teaspoon sugar to the batter and mix well.

Add 2-3 pinches of turmeric powder and 3 teaspoons of oil, mixing thoroughly.

Add the juice of 1 lemon and mix again.

In a small bowl, mix 1/4 teaspoon baking soda with a little water to activate it, then add it to the batter.

Mix the batter in one direction for about 1-2 minutes to aerate it.

Grease the steaming tray with oil and pour half of the batter into it.

Place the tray in a preheated steamer and steam for 20 minutes on high heat.

After 20 minutes, check if the dhokla is cooked by inserting a toothpick; it should come out clean.

Remove the tray from the steamer and let it cool slightly before cutting into pieces.

For tempering, heat 2 tablespoons of oil in a pan, add 1 teaspoon mustard seeds, and wait for them to splutter.

Add some sesame seeds and a few curry leaves to the hot oil, then pour this tempering over the cut dhokla pieces.
