Preheat the oven to 325°F (163°C).
In a food processor, pulse 3 packs of Char's free honey graham crackers until they resemble fine grain sand.
In a bowl, combine the graham cracker crumbs with 1 stick of melted butter, 1/3 cup brown sugar, and 1 teaspoon cinnamon until well mixed.
Spray the bottom of a springform pan with cooking spray.
Press the graham cracker mixture into the bottom of the springform pan to form a crust.
Cover the crust with saran wrap and place it in the freezer while preparing the cheesecake mixture.
In a mixing bowl, combine 2 blocks of softened Philadelphia cream cheese and 1 cup sugar, beating until fluffy.
Add 1/4 teaspoon salt and 1.5 tablespoons Bob's Red Mill 1-1 baking flour to the cream cheese mixture, mixing gently by hand to avoid overmixing.
Stir in 1 teaspoon vanilla extract and add 3 eggs one at a time, mixing well after each addition.
Add 1/2 cup sour cream and 1 teaspoon ground cinnamon to the mixture and combine until smooth.
Remove the crust from the freezer and take off the saran wrap.
Wrap the springform pan in two layers of tinfoil to prevent water from getting in during the water bath.
Chop the Lucky Leaf caramel apple pie filling into smaller pieces for a finer texture.
Spoon the chopped apple pie filling evenly over the crust.
Pour the cheesecake mixture over the apple filling, smoothing out the top.
