1 tsp garam masala

2 tbsp vinegar
Juice of 1/2 a lemon
2 tbsp vegetable oil
2 tbsp finely chopped green chillies
1 cup live yogurt
5-6 spring onions
1 large medium onion sliced in half
1 bulb of garlic sliced in half
Thumb sized piece of ginger
Fresh Rosemary

Prepare the marinade by mixing salt, red chilli powder, red chilli flakes, coriander powder, cumin powder, garam masala, mixed herbs, vinegar, lemon juice, vegetable oil, green chillies, and yogurt.

Rub the marinade all over the leg of lamb and let it marinate for at least 1 hour or overnight for best results.

Preheat the oven to 375°F (190°C).

Place the marinated leg of lamb in a roasting tray.

Add the vegetables: spring onions, halved onion, halved garlic bulb, ginger, and potatoes around the lamb.

Roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 145°F (63°C) for medium-rare.

Baste the lamb with pan juices every 30 minutes for even cooking.

Remove the lamb from the oven and let it rest for 15 minutes before carving.

For gravy, use bisto gravy granules and follow the packaging instructions, reducing it alongside the juices from the roasting tin until thick.
