Marinate lamb leg with salt, black pepper, olive oil, ginger and garlic paste, sumac, cayenne pepper, coriander powder, cumin powder, chopped mint, chopped cilantro, and lemon juice. Make a cut on the lamb and rub the mixture well. Tie the meat and place it in a baking tray or ceramic dish.

Bake the marinated lamb leg for 90 minutes at 350ºF without covering.

In a bowl, prepare the spices mixture for the rice by combining yogurt, salt, pepper, cumin powder, coriander powder, chopped mint, chopped cilantro, and fried and dried onions. Cover the mixture.
