pork ribs

Chicken thighs are leaner and cheaper than ribs.
Prepare the marinade by blending garlic, ginger, onions, tomatoes, green bell pepper, and red bell pepper until smooth.
Add soy sauce, vegetable oil, lime juice, salt, black pepper, paprika, and cayenne pepper to the marinade and mix well.
Coat the pork ribs with the marinade, ensuring they are well covered, and let marinate for at least 1 hour in the refrigerator.
Preheat the grill to medium-high heat.
Remove the ribs from the marinade and let excess marinade drip off.
Place the ribs on the grill and cook for about 15-20 minutes, turning occasionally until they are nicely charred.
Baste the ribs with the leftover marinade during the last 5 minutes of grilling.
Check for doneness; the meat should be tender and the internal temperature should reach at least 145°F.
Remove the ribs from the grill and let them rest for 5 minutes before serving.
Garnish with fresh cilantro before serving.
