Prepare the ube halaya by peeling and boiling the sweet potato until tender.
Mash the sweet potato and mix in butter, condensed milk, evaporated milk, salt, vanilla extract, and violet coloring food.
In a separate bowl, combine egg yolks, condensed milk, evaporated milk, salt, and agar agar powder or gelatin powder.
In a pan, prepare the caramel by mixing sugar, cornstarch, and water, then heating until it reaches a golden brown color.
Pour the caramel into a mold and let it set.
Layer the ube halaya mixture over the caramel and then the leche flan mixture on top.
Chill in the refrigerator until set.
