Rinse the dried anchovies (ikan bilis).

Prep the ingredients: chicken breasts, shrimp paste, red chilies, ginger, lemongrass, curry leaves, cucumber, dried chilies, shallots, peanuts, and tamarind paste.

For coconut rice: Combine equal parts coconut milk and water with thumb-sized ginger and pandan leaf, then cook like regular white rice.

Marinate chicken with lemongrass, brown sugar, oil, and light soy sauce, let rest for 15-20 minutes.

Blend shallots and fresh red chilies in a food processor.

Soak dried chilies for 30 minutes, then blend with shallots.

In a bowl, mix 1 tablespoon tamarind paste with 1 cup of water.

Shallow fry peanuts until crispy, then fry anchovies.

In a wok, heat 5-6 tablespoons of canola oil, sauté shallots until translucent, then add blended chili mixture and fry for 3 minutes.

Add shrimp paste and water to the sambal, simmer and adjust seasoning with sugar to taste.

Add half of the fried anchovies and curry leaves to the sambal, simmer for 20 seconds.

Cook the marinated chicken in oil, skin side down for 3-4 minutes on each side.

Slice cucumber and prepare hard-boiled eggs for serving.
