1 lb phyllo dough
8 oz crumbled feta cheese
4 large eggs
1 cup yogurt
1/2 cup sparkling water
1/4 cup olive oil
1 teaspoon salt

Prepare a brushing mix with 1 to 2 tablespoons of oil and 1 to 2 tablespoons of sparkling water.

Brush the bottom of your baking dish with the oil and sparkling water mix.

Lay down your first sheet of phyllo dough and brush it with the oil and water mix.

Sprinkle crumbled feta cheese on top of the brushed dough.

Repeat the layering process with one sheet of dough, a brush of the mix, and a sprinkle of cheese until all but one sheet is used.

Place the last sheet on top to seal the layers.

Cut the gibanica into squares to help the topping soak in and make it easier to serve.

In a separate bowl, whisk together the eggs, kefir or buttermilk, sparkling water, oil, and salt.

Pour the mixture evenly over the dough and let it sit for about 15 minutes.

Bake at 200° C (about 390° F) for 30 to 40 minutes or until golden brown and crispy on top.
