Cooking Oil – 1 TBsp
Onion (sliced) – half
Daikon – ½ (sliced)
Miso Paste – 2 TBsp
Ramen – 3-4 servings
Plain Soy Milk – 1/3-1/2 cup
Garlic Powder

Chinese Cooking Wine – 1 TBsp
Water – 1.5-2 cup
Hondashi (Bonito Soup Stock Powder) – 1 tsp
Chili Oil – 1-4 tsp
Bonito Flakes – a big bunch
Sesame Oil – a little
Dark Soy Sauce – a little
Leftover teriyaki chicken / tempura – free to determine quantity
Fish Ball / Fish Cakes of choice – 1-2 servings
Tofu Puff – several
Egg – 2

Apply Cooking Spray – a little to pot, follow by Cooking Oil – 1 TBsp.

Peel & slice Daikon – ½, set aside.

Slice Onion – ½ and place directly into pot. Sauté until almost transparent, then add in Mirin – 2 TBsp. Stir fry a bit until fragrant.

Simultaneously, boil Fish Ball / Fish Cakes of choice – 1-2 servings, if applicable. Set aside to serve as hot pot meal later. Do the same with Ramen – 3-4 servings, if applicable. Then drain & set aside to serve with the soup base later as ramen soup.

Add Miso Paste – 2 TBsp to the pot. Stir fry for a while. This is crucial for the taste of Miso to intensify.

Next, add in Daikon – ½ (sliced), follow by seasoning I (see list above). Simmer with lid on until Daikon slices soften. This takes a few to several min. Monitor closely and add more Water, if the pot gets too dry.

Taste test for possible adjustment to seasoning. Then proceed to Seasoning II – see list above. Stir well to combine. Lid back on to simmer a little more.

Lastly add in Plain Soy Milk – 1/3-1/2 cup per personal preference on taste. This is a helpful thickener & powerful taste enhancer.

If there are any leftover teriyaki chicken / tempura – free to determine quantity as optional ingredients, add them into the soup base to re-heat. Stir occasionally to avoid sticking / burning.

To finish the soup base, do the final round of Seasoning III – see above. Stir to combine and do final taste test for possible adjustment to seasoning.

If there are any Fish Ball / Fish Cakes of choice – 1-2 servings, Tofu Puff, Egg – 2 (all optional), get them into the soup base last so as not to over-cook.
