150 g cold water
1/4 tsp salt
227 g (1/2 lb butter) softened
27 g all-purpose flour
296 ml milk, divided
264 g granulated sugar
1 cinnamon stick
158 ml water
1/2 teaspoon vanilla extract or vanilla bean paste
6 large egg yolks, whisked

Combine flour, cold water and salt in a stand mixer with the dough hook and mix at medium speed until it forms a dough and releases from the sides of the bowl.

Wrap the dough in plastic wrap and rest at room temperature for one hour.

Roll out the dough and laminate as described in the video, turning the dough 90 degrees between folds.

Whisk together flour and 1/4 cup water (60ml) until smooth.

Scald the remaining milk in one pan and combine the sugar, cinnamon and water in another pan.
