Originating from the Belém district of Lisbon, Pasteis de Nata were created by monks in the 18th century. These delightful custard tarts quickly became a beloved staple in Portuguese cuisine, often enjoyed with a sprinkle of cinnamon or powdered sugar. Today, they are celebrated worldwide, with variations appearing in many countries, yet the classic recipe remains a cherished symbol of Portugal's culinary heritage.

Greek yogurt reduces calories while maintaining creaminess
Prepare the puff pastry by keeping it cold for easier handling.
Roll the puff pastry into a log shape.
Cut the rolled pastry into pieces about the thickness of a finger.
Use either muffin tins or disposable aluminum molds to shape the pastry.
Place the pastry with the cut side up in the molds to ensure a crispier texture.
Do not grease the molds as the puff pastry contains enough butter.
In a saucepan, mix liquid milk, sugar, cornstarch, a pinch of cinnamon, and lemon zest.
Heat on low, stirring constantly until the mixture thickens slightly.
Temper the egg yolks by adding a bit of the hot mixture to them and stirring well to avoid curdling.
Return the tempered mixture to the saucepan and mix thoroughly to combine.
Preheat the air fryer before filling the molds with the cream mixture, being careful not to overfill to prevent overflow.
Place the filled molds in the air fryer basket and cook for about 15 minutes or until golden brown.
Let the pastel de nata cool completely before removing from the molds and serving.
