Preheat the oven to 160ยฐC (320ยฐF).
Prepare a caramel by heating sugar in a saucepan until it melts and turns golden brown.
Pour the caramel into a mold, tilting to coat the sides evenly.
In a bowl, whisk together eggs and sugar until frothy.
Add milk, cocoa powder, and vanilla extract to the egg mixture and mix well.
Stir in ground almonds and brewed coffee until fully combined.
Pour the mixture into the prepared mold over the caramel.
Place the mold in a larger baking dish and fill the dish with water halfway up the sides of the mold.
Bake in the preheated oven for about 45 minutes, or until set.
Remove from the oven and let cool at room temperature.
Refrigerate for at least 4 hours or overnight.
To serve, invert the mold onto a plate to release the pudding.
