1 tablespoon ginger
1 green pepper
1 teaspoon paprika
1 teaspoon black pepper
1/4 cup fresh coriander
2 green onions
2 cups tomatoes (diced)
2 plantains
2 cups yams (diced)
4 cups water
2 cups greens (jobio)

Cut the beef kidneys into small pieces.

Wash the kidneys thoroughly and place them in a pot to cook for more than 30 minutes.

Peel the plantain and yams, cutting the yams in half.

Wash the peeled yams and plantain, then place them in a saucepan with a green leaf on top.

Add 3 cups of water to the saucepan and cover it to cook for 1 hour.

Boil the beef kidneys for about 45 minutes until they are soft.

Fry the boiled beef kidneys in cooking oil, adding garlic and ginger.
