Sauté the chopped bacon in a little oil.
Add the onions and sauté until translucent, then add the chopped garlic and fry for a couple of seconds; set aside to cool.
Make an incision in the tenderloin, opening it like a book without cutting through.
Tenderize the meat to approximately 1 cm thick, shaping it into a rectangle; set aside.
Soak the stale bread in milk and squeeze it out.
Add the sautéed bacon-onion mixture and its fat, the egg, chopped parsley, and season with salt and pepper; combine well.
Season the meat with salt and pepper and spread over 2 cloves of pressed garlic.
Add the bread filling and spread it evenly on the meat.
Place the raw sausage at the edge closer to you and roll up the meat.
Place the rolled meat on the bacon slices and wrap it up; secure the folded side with small metal skewers and tighten with kitchen twine.
Transfer the meat into a baking pan, adding sliced tomatoes, onions, and garlic.
Cover the baking pan with aluminum foil and roast in a preheated 375°F (190°C) oven for approximately 90 minutes.
In the last 25 minutes, remove the foil to bake the bacon to a golden brown color.
Let it cool completely before slicing.
