Take the scales off the fish.

Stuff the stomach of the fish with carrot and onion.

Rub olive oil on both sides of the fish, but not too much since it will be grilled.

Wrap the fish in aluminum foil after applying olive oil.

Make cuts in the fish to allow heat to penetrate during grilling.

Preheat the grill before placing the fish on it.

Clean the grill before use, scraping it instead of washing with water to prevent rust.
