Originating from the Anatolian region of Turkey, Gozleme is a traditional flatbread often filled with various ingredients like cheese, spinach, or meat. It is a popular street food, enjoyed by families and friends alike during gatherings. Today, Gozleme has gained global popularity, appearing in Turkish restaurants worldwide and often adapted with diverse fillings to cater to different tastes.

In a mixing bowl, combine 2 cups of flour, 1 teaspoon of salt, and 1 cup of water.
Mix until a dough forms, then knead for about 5 minutes until smooth.
Cover the dough with a damp cloth and let it rest for 30 minutes.
In another bowl, prepare the filling by mixing 1 cup of spinach, 1 cup of crumbled feta cheese, and 1/2 teaspoon of black pepper.
In a skillet, cook 1 cup of ground beef with 1 chopped onion until browned, then add the spinach and feta mixture to it.
Once the filling is ready, divide the rested dough into equal portions and roll each into a thin circle.
Spread the filling mixture evenly over half of each dough circle.
Fold the dough over to cover the filling and press the edges to seal tightly.
Heat a 12-inch cast iron skillet over medium heat and brush with 2 tablespoons of olive oil.
Cook each gozleme for about 3-4 minutes on each side until golden brown.
Remove from the skillet and keep warm while cooking the remaining gozleme.
Serve hot with a side of yogurt mixed with 1 tablespoon of sumac and 1 tablespoon of lemon juice, garnished with sesame seeds.
