Baklava

1 lb store-bought fillo pastry
1 cup chopped pecans or walnuts
1 cup water
1 teaspoon vanilla
1 cup honey (Linden honey)
1 cup sugar
1 cup butter

Finely chop the nuts using a food chopper.

Add cinnamon to the chopped nuts and mix well.

Spray a sheet pan with nonstick cooking spray.

Melt the butter in the microwave.

Brush melted butter on the bottom of the pan.

Layer two sheets of phyllo dough in the buttered pan, brushing each layer with butter.

Repeat layering with two sheets of phyllo dough and brushing with butter until you have eight layers total.

Sprinkle 2 to 3 tablespoons of the nut mixture on top of the eighth layer.

Add another two sheets of phyllo dough on top, brushing with butter again, and repeat until all phyllo is used.

Cut the assembled baklava into diamond or square shapes using a sharp knife sprayed with nonstick cooking spray.

Preheat the oven to 350°F (175°C) and bake for about 50 minutes.

In the last 30 minutes of baking, combine water and sugar in a small pot and bring to a boil over medium-high heat until sugar dissolves.

Add vanilla and honey to the syrup and simmer for 20 minutes, stirring occasionally.

Remove baklava from the oven and pour the syrup over it immediately.
