Pan Seared Lamb Chops

4 lamb chops
1 medium onion, chopped
1 medium carrot, chopped
1 stalk celery, chopped
2 cloves garlic, minced
1 tsp fresh rosemary, chopped
1 tsp fresh thyme, chopped
1 bay leaf
2 tablespoons fresh parsley, chopped
1 cup dry red wine (cabernet sauvignon)
1 cup veal broth
1/2 cup water
2 tablespoons butter
to taste salt
to taste black pepper
2 tablespoons olive oil

Trim the lamb chops and cut the trimmings into smaller pieces.

Season the lamb chops with salt and freshly ground black pepper on both sides.

Add oil to a pan and sear the trimmed lamb meat for about 4-5 minutes without touching it.

Turn the trimmed meat to brown all sides, then drain the fat from the pan.

Add half a tablespoon of butter to the pan and turn the heat down.
