Preheat the oven to 100°C (210°F).
Whisk egg whites in a clean bowl until soft peaks form.
Gradually add granulated sugar, whisking until stiff peaks form and the mixture is glossy.
Fold in cornstarch and vinegar gently until combined.
Spoon or pipe the meringue onto a lined baking sheet in desired shapes.
Bake the meringues for 1.5 to 2 hours until dry and crisp.
Turn off the oven and let the meringues cool inside for an hour.
In a saucepan, heat heavy cream over medium heat until just simmering.
Remove from heat and add dark chocolate, stirring until smooth.
Stir in vanilla extract for flavor.
Serve meringues topped with Morello cherries and drizzled with dark chocolate sauce.
