Add yeast and sugar in a bowl, mix with lukewarm water, and set aside.

In another medium bowl, add heavy coconut milk and crack in 1 large egg, whisk together and set aside.

In a large bowl, add all-purpose flour, coconut powder, cardamom powder, nutmeg, sugar, and a pinch of salt, then mix together.

Create a well at the center and pour in the proofed yeast and the wet ingredients, then mix until a dough forms.

Transfer the dough to a flat work surface and knead until smooth and elastic, about 10 to 12 minutes by hand or 7 minutes using a mixer.

Oil a bowl large enough to accommodate twice the size of the dough, place the dough inside, rub with oil, cover with plastic wrap, and let rise in a warm place for 45 minutes to 1 hour.

Punch down the dough to remove air, transfer to a flat work surface, and divide into 6 to 8 hand-sized pieces.

Roll each piece into a circle, then divide each circular disc into four using a pizza cutter or knife, and let rest for about 5 minutes before frying.

Heat oil in a pan over medium heat, and once hot, drop in the mandazi without overcrowding.

Fry until the top is well rounded, about 45 seconds, then flip and continue to fry until golden brown, flipping a couple of times.
