Use one cabbage for every pound of meat, square the bottom of the cabbage, and remove the core.

Boil a big pot of water, add salt, and then add the cabbage heads to blanch them.

Once blanched, remove cabbage and place in a colander to drain.

Refill the pot with cold water and place the cabbages in to cool them down quickly.

Remove outer leaves until only a small core is left, rinse rice under cold water and let drain.

Take two overlapping cabbage leaves, place a small amount of meat mixture in the center, and roll tightly like a cigar.
