Kofta and potato stew

Add ground beef to a bowl.

Add onion, garlic, parsley, pepper paste, and spices to the ground beef and mix well.

Form the mixture into one-inch balls.

Heat a pan on medium heat and add olive oil.

Add the kofta balls to the pan and sear them lightly on all sides.

Remove the kofta from the pan.

In the same pan, add chopped onion and potatoes and cook for about five minutes.

Add a tomato and a 6 ounce can of tomato paste to the potatoes and onion and mix well.

Let the tomato paste cook for a couple of minutes.

Return the kofta to the pan and add four cups of water.

Season with salt and black pepper, cover, and let it simmer on medium heat for about 20 minutes until the potatoes are cooked.

Garnish with parsley and serve with white vermicelli rice.
