1 lb tofu
1 cup yellow bell pepper, diced
1 cup green capsicum, diced
1 cup red bell pepper, diced
1 cup mushrooms, sliced
1/2 cup spring onions, chopped
3 tablespoons soy sauce
2 tablespoons chili sauce
2 tablespoons ketchup
1 tablespoon vinegar
1 tablespoon honey
2 tablespoons sesame oil
2 tablespoons butter
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon chili, chopped
2 tablespoons toasted sesame seeds
1 cup yogurt
1 teaspoon dried red chili seasoning
2 cups baby spinach
1/2 cup fresh herbs (mint, coriander), chopped

Take a packet of frozen gold malabar parathas out of the freezer.

Cut tofu into cubes for tikka tofu.

Switch on the gas and heat a pan, adding sesame oil and a little butter.

Once the oil is hot, add the tofu to the pan to get some color.

Slice yellow, green, and red bell peppers, removing the white part to avoid bitterness.

Slice mushrooms, either by slicing or dicing them.

Check the tofu for light caramelization and color.

Add sauces to the tofu: ketchup, honey, soy sauce, chili sauce, chili garlic sauce, and vinegar.
