Rice paper is gluten-free, while wonton wrappers are typically cheaper.
Prepare the filling by shredding cabbage and carrots, and chopping green onions and garlic.
Heat vegetable oil in a skillet over medium heat and sauté garlic and ginger until fragrant, about 1-2 minutes.
Add ground pork to the skillet and cook until browned, breaking it apart, about 5-7 minutes.
Stir in cabbage, carrots, bean sprouts, soy sauce, sesame oil, black pepper, and salt. Cook until vegetables are tender, about 3-4 minutes.
Remove the mixture from heat and let it cool slightly before adding chopped cilantro and egg.
Lay a spring roll wrapper on a clean surface with a corner facing you. Place a spoonful of filling near the corner.
Fold the corner over the filling, then fold in the sides and roll tightly to seal. Repeat with remaining wrappers and filling.
Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
Fry the spring rolls in batches until golden brown and crispy, about 3-4 minutes per side.
Remove spring rolls and drain on paper towels to remove excess oil.
Serve hot with dipping sauce of choice.
