400g (14oz / 1 3/4 cups) Flour
240ml (1 cup) Water
1 oz olive oil
5g (1 tsp) Salt
300g (11oz) ground meat
100g (3 - 4 oz) baby spinach
half a chopped onion
3 chopped green onions
1 bell pepper diced
2 cloves of garlic
4 oz of goat cheese
1/2 tsp corriander
1/2 tsp cumin
1/2 tsp paprika
1/4 to 1/2 tsp cayenne
1 tsp Salt
1 tsp Pepper

If using yeast, use warm water and bloom the yeast with the sugar in the water.

Mix flour, oil, salt and water (with yeast in it if using).

Knead until you have a smooth dough.

If using yeast let double, knock down and let double again. If not using yeast, just rest the dough for half an hour.

Roll out portions of the dough to the size of your pan. Thin please, as thin as you can.

Fill the dough as shown and crimp.

Brush the pocket with oil and cook in the preheated pan until crispy.
