Today, variations abound, with different breads and toppings, allowing for a personalized touch to this classic dish.

Almond milk reduces calories while maintaining creaminess
Cut the challah bread into half-inch thick pieces.
Fill a buttered 9 by 13 pan with the bread pieces until it is filled from rim to rim.
In a bowl, combine 10 eggs, 3 cups of half-and-half, 3/4 cup of granulated sugar, 1 teaspoon of vanilla extract, 1 teaspoon of salt, 1 teaspoon of cinnamon, and 1/2 teaspoon of ground nutmeg. Whisk together until well combined.
Pour the egg mixture over the bread in the casserole dish.
Cover the casserole dish with plastic wrap and refrigerate overnight to allow the bread to absorb the egg mixture.
The next day, preheat the oven to 350 degrees Fahrenheit.
In a bowl, combine 1 cup of brown sugar, 1 stick of softened salted butter, 8 ounces of softened cream cheese, 3/4 cup of chopped fresh pecans, 1 teaspoon of pumpkin pie spice, 2 teaspoons of maple syrup, and 1/2 teaspoon of salt. Mash together until well combined.
Spread the praline topping evenly over the bread in the casserole dish, making sure to get it in between the layers of bread.
Bake in the preheated oven for 40 to 50 minutes until golden brown and bubbly.
Remove from the oven and let cool for about 15 minutes before serving.
Serve with heated maple syrup poured on top.
