240 min
medium
8 servings
Servings4
1 1/4 cups graham cracker crumbs
3 tablespoons sugar
1/3 cup butter (6 tablespoons)
1/2 cup freshly squeezed lemon juice
1 can (14 oz) sweetened condensed milk (Eagle brand)
1 teaspoon vanilla flavoring
1 tablespoon lemon zest (optional)
1

Start by crumbling 1 1/4 cups of graham crackers to make crumbs.

2

Add 3 tablespoons of sugar to the graham cracker crumbs.

3

Melt 1/3 cup (6 tablespoons) of butter and add it to the crumb mixture.

4

Mix the ingredients together using a fork, then use your hands to ensure everything is well combined.

5

Transfer the mixture to a 9-inch pie plate and press it evenly on the bottom and up the sides.

6

You can either refrigerate the crust for 1 hour or bake it at 350°F for 8 minutes, then let it cool before chilling.

7

After chilling, prepare the filling by adding 14 oz of sweetened condensed milk to a mixing bowl.

8

Add 1/2 cup of freshly squeezed lemon juice and 1 teaspoon of vanilla flavoring to the bowl.

9

Use an electric hand mixer to beat the mixture until it thickens, which may take some time.

10

Add 1 tablespoon of lemon zest to the mixture and continue mixing until combined.

11

Pour the filling into the prepared pie crust and smooth it out.

12

Chill the pie in the refrigerator for several hours before serving.
